Ole Martin


The wine list is managed Norway's best natural wines. I found No Wines's Land. Created in parts of Cornas where no stock Cornas. Matthieu Barret from Domaine du Coulet consumption own name to make this wine.
M +, fruits, partially crushed, fresh ripe blackberries, freshly painted black pepper. Animal. Deep, clean, beautiful. Medium-full bodied. Fruity. M + acid. Fresh. M tannin. Balanced. A little larder sweetness in the fruit, lovely and clean. Mineral stone, almost ink. Balanced, very long. 90 points (Joseph reported the rest were "simply beautiful" the next day)
Pork neck was a work of art. Look at the mix of colors. It was the pork neck "the christmas way". Perfectly cooked pink, tender. The right amount of fat. Red onions, several types of onions, walnuts, sossis salad. Wonderful flavors in perfect harmony. Absolutely ideal for wine with its dark berries, pepper and perfect tannin levels.
Joseph R. Di Blasi's's sommelier and undisputed vinleder. He has put together a wonderful wine list. Now he has been joined by Italian Alessandra Migoni, who trained in natural wines. A very entertaining and attentive host. There appeared a number of natural wines on the table along from eg Denavolo, Princic and Klinec. Beautiful and interesting larder flavors. Pinot Grigo and Malvazija was new for me in natural way.
Accede, was there a couple of weeks before you and seriously considering one return visit also last week; Joseph had Chaine de Rotissur to deal with in another part of the room, but still took the time to explain and elaborate the philosophy behind the food and vinvalg. Food: Slightly rustic feel, with strong smalkselementer; pickled herring and halibut carpaccio with a stitch larder of apples were accompanied by biodynamic sake, memorable, spec. against the fat herring.
